FAIR FACES: When it’s time to flip the chops, Larry Erb is there

GOSHEN — Enjoy your meal at the Pork Producers building Thursday at the Elkhart County 4-H Fair? If so, someone you can thank is Larry Erb of Benton.

Thursday afternoon, Erb was one of the folks manning the grills.

“Let’s turn these, guys,” he said to a couple of other men on duty. It was time to flip the butterfly chops to get them meal-ready. The pork chop menu offerings were on another grill.

“Those are bone-in,” he explained. “These are bone-out.”

Quizzed by a Goshen News reporter, Erb explained that his Thursday shift was hardly his first time working the grills.

“Oh, no,” he said. “I’ve been doing this for about 20 years.”

Erb said he’s partially retired from Erb’s Upholstery in Benton. He has a history with the 4-H fair but wasn’t a 4-H’er himself, though his children were in the program.

“The kids are all through,” he said of their time in 4-H, “now the grandkids are almost all through.”

Of the 2013 fair, Erb said the first couple of days were pretty warm. Then came more moderate temperatures.

“It’s been great. Wonderful weather,” he said. “...It’s just good for the whole fair, when the weather’s cool.”

While fairgoers Thursday enjoyed that relative coolness, the butterfly chops at the Pork Producers were getting a grilling.

“Getting close,” Erb announced. “Not quite yet.”
