Witmer family continues new cider-making tradition

---- — GOSHEN — Inside a shed behind their farm house on County Road 32, just west of Goshen, the Witmers make their apple cider.

Three gallons per bushel of apples is the yield rate, according to Dean Witmer, owner of Creekside Farm with his wife Vera.

The apples are ground and then dumped onto plastic pieces with press cloths draped over them and stacked until they have about five bushels used and then the wrapped apples are placed under a hydraulic press where they are pressed until the cider is wrung out.

The couple makes and sells their cider, apples, maple syrup and other farm produce at the Goshen Farmer’s market.

Dean and Vera said the best cider comes from using a variety of apples, as opposed to just one kind.

Vera said they began making cider in 2005.

Last year, the couple said they were only able to press cider once because of the drought, this year though they have been pressing a few times a week.

“We should be able to press until Christmas,” Vera said.
